Momma Sharon's Meatloaf
So, the farm we live on was the house I grew up in. We purchased our home from my parents this past summer!
Growing up out in the middle of nowhere, on a old dusty road, was a lot of fun! We rode dirt-bikes and quads. We climbed trees. We swam at the neighbor's house. And best of all, we didn't come home until the lightening bugs came out!
...unless it was dinner time...
One of my favorite childhood meals is my Momma's meatloaf!! It was a staple in our home, complete with a baked potato and frozen (FROM OUR GARDEN!) green beans.
Prep Time: 15 mins
Cook Time: approx 1 hour and 15 mins
Temp: 400 degrees
Ingredients:
2 lbs ground beef
1 pkg onion soup mix
1 sleeve saltine crackers (can substitute steel cut oatmeal - 2 cups)
2 large eggs
1 15oz jar petite diced tomatoes (we use our canned sweet peppers/onions/garlic/tomatoes)
1 sweet onion, finely chopped
Salt, pepper, garlic to taste
Directions:
Put it all in a large bowl and mix together with your hands! Yes, your washed hands!
Dump into a greased bread loaf pan.
Put in the oven and bake!
Now, you can also do this recipe in the crock pot with your baked potatoes!
We like to use crock pot liners...
Wrap your potatoes in tinfoil and place around the side of the crock pot. Place your crock pot line over the potatoes and put the meatloaf mix, formed, into the middle. Cook on low for 6 hours.
